Water Activity vs Moisture Content What Is the Difference? Malaysia Water activity and moisture content are two commonly used measurements in food quality control, but they do not measure the same thing. A product can contain a certain amount of water while having a very different water activity level from another product with similar moisture content. Understanding this difference is important when selecting between a Water Activity Meter and a Moisture Meter. WHAT IS MOISTURE CONTENT? Moisture content measures the total amount of water present in a material. WHAT IS WATER ACTIVITY? Water activity, normally expressed as Aw, describes the availability or energy state of water within a product. It is expressed on a scale from 0 to 1.
